crockpot chicken noodle soup

It’s been chilly and I have been in the mood for soup! I have this thing – I want to become a better cook and I want to have recipes that are like “oh yeah, that’s Shanna’s recipe.” You know? My Gramma is basically known for her gravy and mashed potatoes and dressing and etc. So, people often say “that’s Lois’  recipe. No one else can make it as well!” and she just owns it. Like I’ve mentioned before, I kind of want to be like Gramma.

Anyway, I was feeling confident and really wanted homemade chicken noodle soup. After scouring Pinterest and finding that I was missing ingredients to every single recipe I found, I decided to improvise. Here’s what I came up with. I don’t want to toot my own horn, but it was delicious. Dave even agreed. 🙂

I used {I didn’t measure anything, so these are approximations – just like Gramma! :)}:

  • 1 package frozen veggies {mine had carrots, green beans, lima beans, & peas}
  • 1 large Russet potato, cubed
  • 3 large chicken breasts {frozen or thawed}
  • 2 cans chicken broth
  • 1.5 cups water
  • 1 chicken bouillon cube
  • 1 package dry onion soup mix
  • 1/2 tsp salt
  • 1.5 T parsley
  • 1 tsp oregano
  • 2 handfuls {probably 1.5 cups} egg noodles

I threw all the ingredients, except the noodles, in the crockpot on low for 8 hours. After 8 hours, I took the chicken out, shredded it, put it back in the crockpot with the noodles and cooked an additional 45 minutes.

THAT’S IT! Dave and I decided that next time we would add some paprika or something for a little more kick, but I must say, this soup is really yummy. It made plenty for us to both have heaping bowls {and a half!} plus there is lots left over for lunch!

Brody didn’t get to try it, but I bet he would’ve liked it, too. 🙂
